Sloppy Joe Filled Flatbreads

Delicious flatbreads loaded with sloppy Joe and gooey mozzarella. Yum!

Ingredients
- 500g 20% Fat Beef Mince
- 1 Red Onion, Chopped
- 1/2 Pepper, Chopped
- 60g Fresh Mozzarella, Sliced
- 250ml Natural Yoghurt
- 450g Self Raising Flour
- 3 Cloves Garlic, Chopped
- 2 Tablespoons Tomato Puree
- 1 Tablespoon Ketchup
- 1 Tablespoon BBQ Sauce
- 1/2 Teaspoon Cajun Seasoning
- 1 Teaspoon Smoked Paprika
- 100ml Vegetable Stock
Method
- Add the yoghurt and flour to a large mixing bowl with a pinch of salt. Wet your hands and mix it all together well until it makes a dough. The dough shouldn’t stick to your hands when it's done, so add more flour if it does.
- Roll the dough using a rolling pin or something similar and divide the dough into 8 small balls. Roll these balls out into circular flatbreads.
- In a frying pan add the beef mince and fry with a little oil until browned. Drain any fat from the pan then add the garlic, onion and pepper and fry for 5 more minutes. Add the tomato puree, ketchup, BBQ sauce, stock, smoked paprika and Cajun seasoning, mix and fry for another 5 minutes.
- Slice up the mozzarella into 8 pieces, add one tablespoon of the mixture to the centre of each flatbread. Add some mozzarella and fold all the sides and layer them on top of each other to make a sealed parcel.
- Heat up some oil in a frying pan and add half of the filled flatbreads to the pan. Fry on a low-medium heat for 5 minutes then flip and fry the other side for 5 minutes. Do the same with the remaining 4 flatbreads then serve. Feel free to add any remaining sloppy Joe mixture to some fries or potatoes with grated cheese!
