Cheesy Taco Bean Chilli

Ingredients
- 1 Tin of Chopped Tomatoes
- 1 Tin Mildy Spiced Taco Mixed Beans
- 200g Long Grain Rice
- 3 Red Onions
- 4 Garlic Cloves
- Half Pack Mozzarella
- 4 Tsps Greek Style Natural Yoghurt
- 1 Tbsp Of Smoked Paprika
- 1 Tsp Of Chilli Powder
- 1 Tsp Of Cajun
- Chilli Flakes
- 1 Tbsp Of Sugar
- Oil
- Salt
- Pepper
Method
- Fry 2 chopped onions and 4 cloves of chopped garlic in some oil.
- Once they are soft, add tin of chopped tomatoes and taco beans.
- Add 1 tablespoon of smoked paprika, 1 teaspoon of chilli powder and 1 teaspoon of cajun seasoning.
- Cook your rice according to packet instructions.
- Chop up some fresh onion and serve your chilli over the rice with some raw, crunchy onion, some fresh, torn up mozzarella, a teaspoon of yoghurt/soured cream and chilli flakes. This chilli is also great over nachos, hotdogs, jacket potatoes or you can make some loaded fries with it.
