Cheesy Taco Bean Chilli

Ingredients

  • 1 Tin of Chopped Tomatoes
  • 1 Tin Mildy Spiced Taco Mixed Beans
  • 200g Long Grain Rice
  • 3 Red Onions
  • 4 Garlic Cloves
  • Half Pack Mozzarella
  • 4 Tsps Greek Style Natural Yoghurt
  • 1 Tbsp Of Smoked Paprika
  • 1 Tsp Of Chilli Powder
  • 1 Tsp Of Cajun
  • Chilli Flakes
  • 1 Tbsp Of Sugar
  • Oil
  • Salt
  • Pepper

Method

  1. Fry 2 chopped onions and 4 cloves of chopped garlic in some oil.
  2. Once they are soft, add tin of chopped tomatoes and taco beans.
  3. Add 1 tablespoon of smoked paprika, 1 teaspoon of chilli powder and 1 teaspoon of cajun seasoning.
  4. Cook your rice according to packet instructions.
  5. Chop up some fresh onion and serve your chilli over the rice with some raw, crunchy onion, some fresh, torn up mozzarella, a teaspoon of yoghurt/soured cream and chilli flakes. This chilli is also great over nachos, hotdogs, jacket potatoes or you can make some loaded fries with it.
