Blackberry Champagne Mule Punch

With fresh blackberries and a kick of ginger, this refreshing punch is a taste sensation.

Ingredients

  • 2 x 150g Packs Fresh Blackberries
  • Juice of 2 Limes
  • Juice of 1 Lemon
  • 350ml Vodka
  • 20g Fresh Peeled Ginger
  • 250ml Cranberry Juice
  • 1 Bottle of Chilled Champagne
  • Ice
  • More Lemon, Limes and Ginger, to serve
  • Basil Leaves, to serve

Method

  1. Finely chop the ginger.
  2. Put 150g blackberries, the juices from the limes and lemon and the ginger in a small blender or liquidiser and pulse until blended.
  3. Put this into a large pitcher with plenty of ice.
  4. Pour in the cranberry juice, vodka and slices of fruit and ginger.
  5. Mix well.
  6. Add the Champagne, stir through and serve in chilled glasses with a few basil leaves.
