Whoopie Pie Ice Cream Sandwich

Ingredients
- 310g Self-raising flour
- 200g Caster sugar
- 0.5g Bicarbonate of Soda
- 0.5g Salt
- 110g Salted butter (softened at room temp)
- 1 Large egg
- 180ml Semi skimmed milk
- 1 tsp Lemon juice
- 2ml Vanilla extract
For the filling:
- 1 tub Equis Vanilla Ice Cream
- 1 jar Raspberry Jam
- 1 jar Sprinkles
Method
- Add the lemon juice to the milk and set aside.
- Preheat oven to 170°F / 190°C / Gas 5, place baking sheet into oven.
- Place the dry ingredients into a large bowl (flour, sugar, bicarb + salt).
- Add the cubed softened butter to the dry ingredients and mix well with an electric whisk until well incorporated.
- Mix the milk/lemon mixture, egg and vanilla.
- Add the wet ingredients to the the bowl and whisk until light and fluffy.
- Using an ice cream scoop, scoop the dough onto greaseproof paper on the hot baking sheet, ensure a good space is left between each to allow the sponge cookies to rise (6 per batch).
- Cook for 15 minutes.
- Remove from oven.
- Allow to cool.
- Place another piece of greaseproof on the tray and repeat for a 2nd batch. This should make 12.
- Add the jam and ice crream between two sandwiches, and add sprinkles to decorate.
