Whoopie Pie Ice Cream Sandwich

Have the whole family shouting WHOOPIE! when you give them this delicious treat.

Ingredients

  • 310g Self-raising flour
  • 200g Caster sugar
  • 0.5g Bicarbonate of Soda
  • 0.5g Salt
  • 110g Salted butter (softened at room temp)
  • 1 Large egg
  • 180ml Semi skimmed milk
  • 1 tsp Lemon juice
  • 2ml Vanilla extract

For the filling:

  • 1 tub Equis Vanilla Ice Cream
  • 1 jar Raspberry Jam
  • 1 jar Sprinkles

  

Method

  1. Add the lemon juice to the milk and set aside.
  2. Preheat oven to 170°F / 190°C / Gas 5, place baking sheet into oven.
  3. Place the dry ingredients into a large bowl (flour, sugar, bicarb + salt).
  4. Add the cubed softened butter to the dry ingredients and mix well with an electric whisk until well incorporated.
  5. Mix the milk/lemon mixture, egg and vanilla.
  6. Add the wet ingredients to the the bowl and whisk until light and fluffy.
  7. Using an ice cream scoop, scoop the dough onto greaseproof paper on the hot baking sheet, ensure a good space is left between each to allow the sponge cookies to rise (6 per batch).
  8. Cook for 15 minutes.
  9. Remove from oven.
  10. Allow to cool.
  11. Place another piece of greaseproof on the tray and repeat for a 2nd batch. This should make 12.
  12. Add the jam and ice crream between two sandwiches, and add sprinkles to decorate.
