Roast Beef Reuban Bagel

- Pack of Seeded Bagel’s
- 1 Pack of Sliced Emmental Cheese
- Left Over Roast Beef
- 1 bottle of Thousand Island Dressing
- ½ White Cabbage
- 200ml White Wine Vinegar
- 200g Caster Sugar
Method
- Start by making the pickled cabbage. Pour the white wine vinegar and sugar into a saucepan, bring to the boil until sugar has dissolved. Allow the liquid to cool to room temperature. Thinly slice the cabbage and place into a bowl, pour over the chilled pickling liquid and cover, allow to pickle for at least 1 hour. Drain the liquid.
- Slice the bagel in half and toast, spread the bottom half with lashings of thousand island dressing and then top with a slice of Emmental cheese and toast until melted.
- Pile on thin slices of the left over roast beef followed by the pickled cabbage, add a little more dressing if you wish, put the bagel lid on and enjoy!
