Roast Beef Reuban Bagel

Ingredients

  • Pack of Seeded Bagel’s
  • 1 Pack of Sliced Emmental Cheese
  • Left Over Roast Beef
  • 1 bottle of Thousand Island Dressing
  • ½ White Cabbage
  • 200ml White Wine Vinegar
  • 200g Caster Sugar

  

Method

  1. Start by making the pickled cabbage. Pour the white wine vinegar and sugar into a saucepan, bring to the boil until sugar has dissolved. Allow the liquid to cool to room temperature. Thinly slice the cabbage and place into a bowl, pour over the chilled pickling liquid and cover, allow to pickle for at least 1 hour. Drain the liquid.
  2. Slice the bagel in half and toast, spread the bottom half with lashings of thousand island dressing and then top with a slice of Emmental cheese and toast until melted.
  3. Pile on thin slices of the left over roast beef followed by the pickled cabbage, add a little more dressing if you wish, put the bagel lid on and enjoy!
